Chicken Enchilada Soup


  • 2 rotisserie chickens, deboned and shredded
  • 29 ox can of tomato sauce
  • 4 cups of chicken broth
  • 8 cups of water
  • 2 pkgs Cuginos Chicken Enchilada Soup Mix
  • Toppings of choice


Mix everything together in large pot and bring to a boil. Reduce heat and simmer for 30 minutes, or until beans are tender.

Serve with shredded cheese, onions, tomatoes and tortilla chips.

*recipe can easily be halved.
