- 2 rotisserie chickens, deboned and shredded
- 29 ox can of tomato sauce
- 4 cups of chicken broth
- 8 cups of water
- 2 pkgs Cuginos Chicken Enchilada Soup Mix
- Toppings of choice
Mix everything together in large pot and bring to a boil. Reduce heat and simmer for 30 minutes, or until beans are tender.
Serve with shredded cheese, onions, tomatoes and tortilla chips.
*recipe can easily be halved.
